Larry’s Favorite Sword Fish
Ingredients
2 Leeks
2 ½ Cups Red Wine
Flavored Wok Oil
Four Tablespoons Red Currants
1 cup Sugar
Four Tablespoons Red Slivered Almonds
Four Sword Fish Steaks at Least One Half Inch Thick
½ Cup Cilantro
Lemon Salt
To Cook the Steaks
1. Salt the sword fish the lemon salt and set aside.
2. Cook the leeks in the flavored Wok Oil until brown and set aside. Keep the oil.

Dissolve the sugar in the wind and cook until it
is slightly thick. Add more sugar if
necessary.
Add the currants and almonds. Set aside.
4. Pick the cilantro and do not chop it. Moisten with water.

Cook the sword fish in the flavored oil in which
the leeks were cooked at a medium high heat.
When both sides are brown, top the steaks with the moistened sword fish.
Splash some of the cilantro into the oils so that steam rises. Cover and cook an additional two minutes.
To Serve the Steaks
1. Add about two tablespoons of the wine-currant-almond sauce to each serving plate.
2. Put one sword fish steak with the cilantro directly on top of this sauce.
3. Top with the browned leeks
4. Serve at once.
